Absinthe Bistro was born from a shared dream: to create a warm, welcoming French bistro in the heart of Vancouver’s Commercial Drive, where guests feel like part of the family from the moment they walk in.

Chef Cory Pearson’s journey began with a deep passion for French cuisine, which led him to France to train and immerse himself in the traditions, discipline, and culture of classic bistro cooking. There, he discovered that French food is about more than technique — it is about patience, respect for ingredients, and the joy of bringing people together around the table.

When Cory returned to Vancouver, he carried that philosophy home with him, along with a clear vision: to build a neighbourhood bistro rooted in authenticity, warmth, and honest cooking.

Alongside him, Shirley  has been an essential part of bringing that vision to life. As co-owner, Shirley is the heart of the guest experience at Absinthe. She has helped shape the restaurant into what it is today — a place where hospitality feels personal, where details matter, and where every guest is genuinely cared for. Her presence, intuition, and dedication to people are woven into the fabric of the restaurant.

Together, Cory and Shirley have built more than a restaurant — they have created a space that reflects their shared values: community, connection, and heartfelt hospitality.

Every detail at Absinthe Bistro reflects this partnership. Cory brings the culinary vision, rooted in French tradition and seasonal creativity, while Shirley ensures that every guest feels welcomed, remembered, and at home.

For them, Absinthe is not just about dining — it is about moments. Celebrating milestones, sharing laughter, and offering a place people return to time and time again.

After more than a decade on Commercial Drive, Absinthe Bistro remains true to its original inspiration: a genuine French bistro experience, shaped by two owners who care deeply about food, people, and community.

For Shirley, Absinthe Bistro is much more than a restaurant. It has become a meaningful part of her life, filled with people, celebrations, and memories shared around the table. As General Manager, she brings warmth and genuine hospitality to every guest, creating an atmosphere where people feel truly at home.

Working closely with Cory , Shirley is proud to help carry forward the vision and spirit of Absinthe. For her, hospitality is about connection, creating memorable moments, and giving every guest a reason to return.

Absinthe Bistro was born from Chef Cory Pearson’s passion for French cuisine and the warm spirit of the neighbourhood bistro. Before opening Absinthe in 2012, Cory immersed himself in the culinary traditions of France, where he discovered the importance of technique, quality ingredients, and bringing people together around the table.

Returning to Vancouver, he brought that inspiration to Commercial Drive, creating a restaurant where classic French cooking meets seasonal ingredients and a modern touch.
