Absinthe Bistro opened its doors in August 2012. We are a small neighbourhood restaurant located in the heart of lively Commercial Drive in Vancouver.

Absinthe blends classic and modern french cuisine with a welcoming atmosphere and friendly service.

The Bistro is a casual place for Everyone. The main objective is to make you feel at home!

​Our French Menu is composed of three starters, three mains, and three desserts which change frequently.

The Fixed Price formulas allow our customers to enjoy either a three or a two-course meal for a great value.

​​​​​​​​​​​​​​Absinthe Bistro is an owned and operated family business based on the idea of bringing fresh and flavourful French food to Vancouver.  

Cory attended the Culinary School Paul Bocuse. Two years later he moved to Paris where Cory had the opportunity to work for Chef Michel Rostang.

After living in France for over 6 years, Cory returned to his natal Vancouver to pursue his dream of opening a restaurant.
